After years of adhering to what she described as a “hardcore” food regime, including a lengthy stint on the paleo diet, the Goop founder revealed she’s now embracing the joys of sourdough bread, cheese, and even “a little pasta.”

Speaking candidly on the latest episode of her “Goop Podcast,” Gwyneth Paltrow, 52, admitted that after several years of a strict paleo lifestyle with her husband, producer Brad Falchuk, she’s feeling “a little sick of it, if I’m honest.” This marks a notable departure for Paltrow, who has often been associated with highly restrictive eating plans, including periods of macrobiotics and the elimination of entire food groups like grains and dairy.

Paltrow elaborated on her past dedication to “eating very, very healthily,” recalling a phase of “hardcore macrobiotics” where she became “obsessed” with consuming only the most virtuous foods. This intense focus, she explained, stemmed partly from a desire to support her late father, Bruce Paltrow, during his battle with throat cancer.

However, the wellness entrepreneur now appears to be advocating for a more balanced approach. While she emphasized her continued commitment to “eating foods that are as whole and fresh as possible” to manage ongoing inflammation and health concerns, she acknowledged the shift towards incorporating previously forbidden items.

“I’m getting back into eating sourdough bread, and some cheese – there, I said it,” Paltrow confessed with a hint of defiance. “A little pasta after being strict with it for so long.”

This admission comes after years of Paltrow’s dietary choices making headlines, often drawing both admiration and criticism. Her past pronouncements on everything from bone broth lunches to elaborate detoxes have positioned her as a leading, albeit sometimes controversial, figure in the wellness space. In 2023, her description of a daily intake consisting largely of coffee, bone broth, and vegetables sparked a debate about restrictive eating.

Now, Paltrow seems to be signaling a move towards a less dogmatic approach to food. She described her current philosophy as using healthy eating as a “good template” while allowing for more flexibility and enjoyment. “I don’t think there is any doctor or nutritionist that would refute that [eating whole and fresh foods] is a good starting point,” she noted.

This dietary evolution could reflect a broader trend in the wellness industry, which has seen a gradual shift away from highly restrictive diets towards more sustainable and inclusive approaches to eating. Whether Paltrow’s newfound embrace of carbs will influence her Goop empire remains to be seen, but for now, it appears even the most dedicated wellness advocates occasionally crave a slice of sourdough.
